Good Eats Challenge Week 3 Eggs over Easy

As a kid I always loved having breakfast for dinner so this was a fun one. You wouldn't think eggs over easy would be so difficult but it was fun making it. The most difficult thing about the recipe is the process (obviously there is only the one ingredient).

Hardware:
a small nonstick skillet. Small is key here because you don't want the eggs running all over the place and getting thin rubbery whites. (Not Good Eats!)

Process:

Step 1: Melt 1 tbs of butter over low heat.
Step 2: When the butter stops foaming crack your eggs into the pan and tilt the pan so the eggs collect in one place. This keeps the whites together (about 10-15 seconds)


Step 3: Put the pan back down and jiggle the pan to keep things loose. Season with salt and pepper and cook over low heat for 1-1.5 minutes or until the whites look opaque all the way through.

Step 4: The scary part. Flip your eggs.  Count to ten and flip them back over. We had a bit of a failure on our first attempt and the yolk cracked. Second time was easier. The key is not to hesitate. Just do it!


Step 5: Slide onto a plate and enjoy! We made waffles and bacon to go with but as Alton Brown says, that's another show.
